Frozen soy north

Surprising what you can find in the freezer section at the local grocer: shelled edamame, soy burgers, soy “chicken” tenders, soy ice cream, even soy whipping cream. All of these products are next door to the refrigerated soy milk and soy yogurt. At least, that was my experience at a local Sobey’s store.

Both American and Canadian manufacturers are using field-grown protein as their star ingredient with products that please with taste and texture.

What I didn’t see was soy baco or vegetarian bacon. However, it’s easy to make at home. Marinate some strips of tempeh or tofu in your favourite spices or soy sauce and liquid smoke, then fry or bake at 350°F for about 25 minutes. Half-way through baking, turn once to crisp.

Seems to me that BLT sandwiches just became pure vegan with baco, lettuce and tomato.
