Ingredients
  1. 1 can - 16oz black soybeans (drained and rinsed)
  2. 1 cup corn kernels (drained canned or cooked)
  3. 1 cup celery (sliced)
  4. 1/2 cup sweet red and green peppers (diced)
  5. 1/4 cup green onions and ripe olives (sliced)
  6. 1/4 cup soybean oil (vegetable oil)
  7. 1/4 cup white wine vinegar
  8. 1/2 tsp chili powder
  9. 3/4 tsp salt
  10. black pepper to taste
Instructions
  1. Combine drained soybeans, corn, celery, sweet peppers, green onions, olives and hot peppers in a large bowl. Toss to mix.
  2. Combine remaining ingredients in a small bowl and whisk to blend all ingredients or in a cruet and shake until blended. Add ground pepper to taste.
  3. Pour dressing over soybean mixture and marinate at least 1 hour.
