Ingredients
  1. 1 tbsp soybean oil (commonly labeled vegetable oil)
  2. 1 onion (small, diced)
  3. 3 cups cauliflower (chopped)
  4. 1 cup white potatoes (diced)
  5. 2 cups vegetable or chicken broth
  6. 2 cups plain soy milk
  7. 2 tbsp chopped parsley
  8. 1 tsp lemon zest
  9. 1 tsp garlic (chopped)
  10. to taste, salt and pepper
Instructions
  1. Heat soybean oil in large saucepan over medium heat.
  2. Add onions and cook for 2 to 3 minutes until soft.
  3. Add cauliflower, potatoes and broth.
  4. Cover and cook for 8 minutes until very tender.
  5. Place mixture in food processor. Process 1 minute until smooth.
  6. Return to saucepan and heat over medium heat. Add soy milk and cook, stirring occasionally, until soup begins to simmer.
  7. Season the soup with salt and pepper, as desired.
  8. Ladle into bowls; top with parsley, lemon zest and garlic.
