Ingredients
  1. 3 tbsp soybean oil (commonly labeled vegetable oil)
  2. 3 garlic cloves (chopped)
  3. 1 lb shrimp (peeled and deveined)
  4. 1/2 tsp red pepper flakes
  5. 1 lemon (juiced and zested)
  6. 8 oz farfalle or bow tie pasta (cooked according to package directions)
  7. 1 cup cherry tomatoes (halved)
  8. 3/4 cup edamame (shelled, thawed)
  9. 1 carrot (cut into matchstick-sized pieces)
  10. 1 red bell pepper (cut into 1-inch squares)
  11. 1/4 tsp sea salt
  12. 1/4 tsp fresh black pepper
  13. 1 tbsp italian parsley (chopped)
  14. 2 tbsp parmesan cheese (shredded)
Instructions
  1. Heat soybean oil in large skillet over medium high heat.
  2. Add garlic and cook for 2 minutes, stirring occasionally.
  3. Add shrimp, lemon juice and red pepper flakes. Cook for 2 to 3 minutes, stirring frequently, until shrimp is pink and cooked through.
  4. Add carrots, edamame, bell peppers and tomatoes. Cook, stirring frequently, until the carrots are tender.
  5. Add pasta, salt, pepper, cheese, parsley and lemon zest. Cook, tossing gently, until thoroughly heated.
  6. Top with parmesan cheese, if desired.
