Warm Soy Sauce Dressing
  1. 3/4 tsp bottled hot pepper sauce
  2. 1 cup soy sauce
  3. 1 1/2 cups soybean oil (vegetable oil)
  4. 1 1/2 cups green onions (minced)
  5. 9 cloves garlic (mashed)
  6. 1 1/2 tsp sugar
Layered Tofu Salad
  1. 2 large heads iceberg lettuce (shredded)
  2. 3 red onions (medium, thinly sliced)
  3. 3 us liquid quarts bean sprouts
  4. 9 tomatoes (medium, cut into 1/2 inch cubes)
  5. 3 lbs silken tofu (cut into 1/2 inch cubes)
  6. 1 1/2 lbs canned red salmon or light tuna
  7. 3 cups - 3 oz watercress (cut into 1 inch pieces - optional)
For Buffets
  1. Layer salad ingredients in order of listing in a large shallow bowl or serving platter.
  2. Just before serving, heat ingredients for Warm Soy Sauce Dressing.
  3. Toss salad and serve.
For a Sit-Down Meal
  1. Toss salad and serve about 2 cups per serving.
  2. Garnish with choice of cherry tomatoes, sliced red onions, sweet red or yellow peppers, sugar pea pods or sliced cucumbers.
