Ingredients
  1. 3 cups boiling water
  2. 2 cups texturized soy protein (TSP)
  3. 2 lbs ground turkey breast
  4. 3 cups onions (chopped)
  5. 3 cups green peppers(chopped)
  6. 1 tbsp garlic (minced)
  7. 1 tbsp soybean oil (vegetable oil)
  8. 10 oz canned diced tomatoes, including liquid
  9. 1 L canned tomato sauce
  10. 4 oz - 1/2 cup canned green chilies (diced)
  11. 1/2 tbsp chili powder
  12. 2 tsp alt
  13. 1 tbsp jalapeno peppers (minced)
  14. 2 L water
Instructions
  1. In a large bowl, pour boiling water over soy protein.
  2. In a 14-quart pot, sauté turkey, onions, peppers and garlic in oil over medium high heat until turkey is no longer pink.
  3. Add rehydrated soy protein and remaining ingredients.
  4. Bring to a boil. Reduce heat and simmer uncovered for 45 minutes.
  5. Serve with assorted condiments such as shredded low-fat Cheddar cheese, yogurt, sour cream or minced onion.
