Ingredients
  1. 1 pkg - 350g extra firm tofu (crumbled to a medium size)
  2. 2 tbsp - 30 ml canola oil
  3. 1 cup - 250 ml water
  4. 2 cubes vegetable bouillon (10.6g per cube)
  5. 6 tsp - 30 ml poultry seasoning
  6. 2 cups - 500 ml celery (chopped)
  7. 2 cups - 500 ml onion (chopped)
  8. 6 cups - 1.5 l dry coarse bread crumbs
Optional Ingredients
  1. 1 cup - 250 ml dried cranberries
  2. 2 green apples (small, peeled and diced)*
Instructions
  1. Preheat the oven to 350ºC.
  2. In a saucepan, boil the water and then take it off the heat. Add the bouillon cubes and the poultry seasoning and set aside.
  3. Heat up the oil in a large frying pan and add the crumbled tofu. Fry the tofu for about 5-8 minutes to remove some of the moisture.
  4. Add the onions and the celery and sauté the entire mixture until the vegetables are translucent and the tofu is slightly browned.
  5. Take pan off the heat and add the coarse bread crumbs. Mix well with tofu and vegetable portion.
  6. Add the water, spice and bouillon mixture into the frying pan and mix well with the dry ingredients.
  7. Transfer into a greased 9×12 tray. Bake the stuffing for about 40 minutes or until the top is golden brown.

  1. *To be added with the celery and onion portion of the recipe.
