Ingredients
  1. 6 whole wheat lasagna noodles (cooked according to package)
  2. 1 tsp soybean oil
  3. 1 onion (small, diced)
  4. 3 garlic cloves (fresh, chopped)
  5. 1 lb ground turkey breast (99% lean)
  6. 1 jar - 24oz prepared marinara sauce
  7. 1 zucchini (cut lengthwise into thin slices)
  8. 1 package - 12.3oz silken tofu (drained and crumbled)
  9. 1 1/2 cups reduced fat mozzarella (shredded)
Instructions
  1. Preheat oven to 375°F.
  2. Grease 9×9-inch baking dish.
  3. Heat oil in large frying pan over medium-high heat. Add onions and garlic, stirring frequently, for 2 minutes, until soft.
  4. Add turkey, stirring frequently, for 6 to 8 minutes, until cooked through.
  5. Stir in pasta sauce. Remove from heat.
  6. Spread 3/4 cup pasta sauce mixture over bottom of the prepared baking dish. Top with 2 noodles.
  7. Spread half of the silken tofu over noodles. Top with 1/3 cup cheese, 1 1/2 cups pasta sauce mixture and half of the zucchini slices.
  8. Top with 2 noodles. Spread remaining silken tofu over noodles.
  9. Top with 1/3 cup cheese, 1 1/2 cups pasta sauce mixture and remaining zucchini slices.
  10. Top with remaining 2 noodles, pasta sauce mixture and 1/3 cup cheese.
  11. Cover tightly with aluminum foil.
  12. Bake for 30 to 35 minutes; remove foil and top with remaining cheese.
  13. Bake additional 10 minutes, until lightly browned.
