Ingredients
  1. 1 1/2 cups whole-wheat flour
  2. 1/2 cup quick cooking oatmeal
  3. 2 tbsp baking powder
  4. 1 1/2 cups vanilla or plain soymilk
  5. 4 eggs
  6. 2 tbsp brown sugar (packed)
  7. 2 tbsp soybean oil
  8. 4 cups fresh blueberries (divided)
  9. Maple syrup (optional)
Instructions
  1. Combine flour, oatmeal and baking powder in medium bowl.
  2. Whisk soy milk, eggs, brown sugar and soybean oil in large bowl until blended.
  3. Add flour mixture to soy milk mixture. Stir just until blended. Stir in 2 cups of berries.
  4. Heat large skillet over medium heat. Brush lightly with soybean oil.
  5. Pour 1/4 cup batter into hot skillet. Cook until bubbles begin to burst.
  6. Turn and continue cooking for 1 to 2 minutes or until golden.
  7. Repeat with remaining batter.
  8. Serve with remaining berries and maple syrup, if desired.
